Le Palégrié

Le Palégrié, now in its second location on the Vercors plateau, has quickly established a reputation for exceptional dining.

After refining their craft in Lyon for thirteen years, Guillaume Monjuré and Chrystel Barnier now offer a warm, intimate atmosphere where guests can linger over a leisurely lunch or dinner and savour thoughtfully crafted dishes.

From farmhouse to gourmet restaurant

This charming gourmet restaurant is tucked away in the heart of the picturesque village of Méaudre, which has preserved its authentic, unspoilt atmosphere. As you step inside, the tone is immediately set. What was once a humble barn owned by an ancestor – the renowned Henri – has been transformed by Chrystel Barnier and Guillaume Monjuré into an intimate sanctuary. Every detail reflects their thoughtful touch, turning this historic space into a place where refined elegance meets rustic simplicity. The décor embodies their culinary philosophy, with high-quality materials chosen and crafted to honour their natural beauty.

Elegance & rustic charm

As we step into the restaurant, we’re immediately drawn to the striking shades of red marble that grace the space. The same rich tones adorn the kitchen’s counter, and even the knife-holders at each table, creating a subtle yet powerful connection between the restaurant’s elements. Nearby, a grand table made from a thick plank of wood – monumental, yet weathered – anchors the room. Its rustic charm is complemented by elegant, almost simple Terre de Fer or Gien earthenware plates, which stand in surprising contrast to the delicate, fine stemmed glasses that catch the light. It’s a harmonious balance of elegance and earthiness. And in this setting, each dish is carefully sculpted, a transformation of humble ingredients that, under the chef’s meticulous touch, emerge as works of art.

Local cuisine meets Michelin-star dining

In the open kitchen, the sounds of cooking fill the air: gurgling, smoking, crackling and boiling. There’s no gas or electricity here, only the vibrant energy of a wood-fired kitchen. The chef’s movements are calm and focused, a mesmerising dance of skill.

Chrystel, equally poised, brings the same grace to the dining room, orchestrating the meal with care. As a seasoned sommelier, she is passionate about sharing her expertise, offering wine advice that complements the dining experience.

Together, this dynamic duo draws on their extensive Michelin-starred careers, blending flavours that reflect their refined craft.

The menu blends a rich array of flavours and ingredients, from the fragrant basil of the chef’s childhood in the Bouches du Rhône to the argan oil from La Mamounia in Marrakech and seaweed harvested in Brittany.

Yet, it is the Vercors region that remains at the heart of these culinary masterpieces. This is a cuisine for the long haul, one that is versatile and full of personality, shining a light on local artisans and forging meaningful partnerships, such as with Sisampas Farm, an organic market gardener. It is a generous, communal style of cooking that creates connections, bridges distances and evolves with the seasons.

Each day’s menu is marked with the time of sunset, a nod to the passage of time, urging guests to savour every moment and experience the meal in harmony with the natural world.
