Sourdough bread" training course

La ferme de Chalonne, a group of farmer-bakers, is organising a one-day training course on sourdough bread.

During a day at the bucolic Chalonne farm, you can learn and perfect the techniques for making sourdough bread. Kneading by hand or with a robot, fermentation, sourdough maintenance, shaping and baking will hold no secrets for you at the end of this day, during which you'll be able to ask all the questions you need to ask to make a good sourdough bread at home.

3 stages in this day :
- Theory: sourdough, yeast, starch... a whole world to discover...
- Practice: you'll be getting your hands (and literally) dirty.
- Tasting: at the end of the day, you'll be able to leave with your own beautiful creations.

Course of the day:
- 9am: welcome with coffee and a sourdough brioche
- 9.30am: short theory session (history, farms, gluten, etc.)
- 10am: baking experiments - sourdough kneading troughs
- 11.30am: milling - the different flours
- 12.30pm: aperitif and pizza (bring your own drinks, we'll provide the pizzas)
- 1pm: organic and local meal
- 2pm: baking - shaping
- 3pm: fields - crop observation
- 4pm: baking
- 4.30 pm: "Making bread at home" - advice and practical application for your future bread-making at home
- 5pm: Defournement
- 6pm: debriefing and departure with warm bread
