The establishment is now a hotel in name only. When Éliane Perino took over the café in 1969, she was still welcoming guests to the gîte.
Today, in this historic building dating from 1872, the only thing on the menu is exceptional cuisine… and what a cuisine it is! Gastronomy has been brought to the table. By championing the finest local produce, and organic wherever possible, the cuisine reaches exceptional levels of excellence.
Every year, no fewer than 65,000 lucky diners enjoy the experience, and 80% of them become loyal regulars. According to Pascal, the son, for the restaurant to remain truly welcoming, it must stay open 365 days a year. However, this doesn’t come at the expense of the family atmosphere. As guardians of the family tradition, the three chefs behind the stoves all began their culinary journey under the watchful eye of Madame Perino.
The menu evolves with the seasons, changing four times a year to reflect the natural rhythm of local produce. Michelin-starred chef Jérôme Faure, the culinary godfather of the team, has endorsed the bistronomic spirit that defines their creations. This collaboration brings the story full circle: it was the Hôtel des Bains that offered him his first role as chef a few years ago.
It’s so charming to sit under the century-old plane trees, their shade softly lit by the glow of guinguette garlands crisscrossing the sky above the expansive terrace. Thanks to the collective knowledge of all these people, the cellar has won numerous awards in recent years, consolidating its reputation.
